    I think Richard Blais is a great chef. However, I think the way he presents himself is pretentious and not humbling at all. Especially on Top Chef. Yeah, you won. Congratulations. So did 14 other people and their heads aren’t in the fucking clouds.

    I made this but I substituted ground turkey for the ground pork, added Italians breadcrumbs to the meat, and actually made it into a meat sauce instead of meatballs when my balls decide to fall apart. SOOOO good!!

    the recipe is shit
    the chilli flavour is way overpowering
    and the meatballs have so much ricotta and nothing to firm it up like egg or breadcrumbs so they just fall apart

    Those are pretty unorthodox-looking meatballs. A 50/50 mix of ricotta and meat? What is ricotta doing there in the first place, instead of bread crumbs and egg? I'm surprised he didn't acknowledge the weirdness of his recipe.
